Vegan Nachos
Sit back and relax in front of the television as the dark nights roll-in with a plate of delicious Vegan Nachos topped with spicy jalapenos and melty EPIC Mature Cheddar Flavour cheese
FOR THE NACHOS
- 1 Pack of vegan tortilla chips
- Fresh coriander
- Fresh jalapenos peppers, chopped
FOR THE CHEESE SAUCE
- 1 pack Violife EPIC Mature Cheddar Flavour Grated (RRSP £2.50. Available at Sainsbury’s)
- 50g vegan butter
- 200ml coconut milk
- 1 tablespoon flour
- Paprika
- Salt
- Melt the vegan butter in a frying pan over medium-low heat , then add the flour and stir until smooth. Add the coconut milk, a bit of paprika and salt then stir continuously until it becomes a rich, thick paste. Remove the pan from the heat, add the Violife EPIC Mature Cheddar Flavour Grated and stir until it melts.
- Place tortilla chips in a large bowl. Top them with the sauce, a generous sprinkling of fresh coriander and chopped jalapenos peppers.
