Fully Loaded Chicken-Style Country Pie with Pomegranate & Quinoa Salad

In need of some comfort food? Fry’s open-top Fully Loaded Chicken-Style Country Pie is packed with hearty ingredients and flavours that will leave you feeling satisfied. Serve with a Pomegranate and Quinoa Salad for surprising bursts of sweetness and crunch.

Ingredients

  • 1 Fry’s Fully Loaded Chicken Style Country Pie
  • 65g (1/3 cup) red quinoa
  • 55g (1/3 cup) cous cous
  • 50g (1/3 cup) peas
  • 1 -2 tbsp pomegranate seeds
  • A small handful of basil, roughly chopped (feel free to include your favourite herbs – parsley and mint work really well with this dish)
  • Juice from 1 lemon

Method

  1. Cook the quinoa, cous cous and peas, following pack instructions. Drain well and spread over a platter or wide, shallow bowl to cool quickly.
  2. When the quinoa, cous cous and peas are cool, stir through all of the remaining ingredients with plenty of seasoning.
  3. Heat up the pie so that it is warmed through and serve with the salad.
