Ingredients
- 250g Basmati Rice
- 200g peas
- 1 orange pepper, diced
- 1 chopped spring onion
- 2 tbsp Sacla’ Free-From Basil Pesto
- 1/2 lemon, juiced
- 1 handful of flat leaf, partly chopped
- Salt and pepper
Method
- Cook the rice according to packet instructions.
- When the rice is ready, add it to a bowl with the peas, pepper, spring onion and mix in the Sacla’ Free-From Pesto
- Drizzle the lemon juice over the top, add a sprinkle of parsley, season to taste and serve
