Vegan ‘fish’

vegan fish

  • 1 block of firm tofu
  • Juice of a lemon
  • 100ml white wine vinegar
  • 1 tbsp caper brine
  • 1 tsp salt (for marinated)
  • Nori flakes
  • 3/4 cup plain flour
  • ½ cup cornflour
  • ½ tsp salt (for batter)
  • 1 tsp black pepper
  • 1 1/2 tsp curry powder
  • 1 tbsp baking powder
  • 150ml vegan beer
  • Oil for frying
  1. Cut up a block of tofu into thin slabs
  2. Mix together the lemon juice, vinegar, caper brine and salt in a bowl and marinate your tofu slices in there.
  3. Once marinated, remove from the lemon mix, and sprinkle nori flakes over the tofu on both sides.
  4. Stack them up into two piles and in each stack push in 2 cocktail sticks to secure the stacks.
  5. Mix in a bowl the ½ cup flour, cornflour, salt , pepper, 1 tsp curry powder and baking powder and mix to combine. Then whisk in the beer until a smooth batter forms.
  6. In a separate bowl place the remaining ¼ cup flour and ½ tsp curry powder and mix to combine.
  7. Now dip each of the stacks into the flour and then into the batter and then shallow fry in hot oil until golden and crispy.
  8. Remove from the oil and place onto some kitchen paper and leave. Before serving remember to remove the cocktail sticks!
