Avocado Mint & Cucumber Soup

Avocado Mint & Cucumber Soup

This cool, refreshing palate cleanser has a dash of citrusy lime, shallot and garlic and fresh scented menthol mint.



  • ½ lime, juice
  • 1 cucumber
  • 1 avocado, skinned and deseeded
  • 1 shallot
  • Leaves from 3 sprigs of mint
  • 1 cloves garlic
  • 250ml (8.4 fl oz) water
  • Mint for garnishing
  • Salt and pepper, to taste


  1. Combine all ingredients in a blender and whizz to a fine consistency
  2. Season with salt and pepper to taste.
  3. Transfer the soup to a serving bowl. Garnish with mint leaves and serve.
