Cabbage, Citrus, Red Onion & Coriander

Cabbage, Citrus, Red Onion & Coriander - Serve this alongside your plant-based feast this Christmas for some extra colour and flavour.

Serves 4


  • ¼ red cabbage, finely sliced
  • ¼ white cabbage, finely sliced
  • 2-3 oranges, mandarins or both, peeled and cut into chunks, excess juice reserved
  • 1 red onion, finely sliced
  • 1 big handful of coriander (cilantro), shredded
  • Extra-virgin olive oil
  • 1 lemon, juiced
  • Sea salt flakes (kosher salt)


  1. In a large bowl, add the cabbage, oranges (including any excess juice from the peel or chopping board), red onion and coriander (cilantro).
  2. Drizzle over some olive oil, squeeze in the lemon juice and season with sea salt flakes (kosher salt). Using your hands, mix the salad thoroughly (this is important!), and taste to see if it is balanced to your liking. Adjust as necessary.
