
Coronation Chickpea Sandwich
Coronation Chicken is a traditional favourite with many people, but going vegan doesn't have to mean missing out! This plant-based version uses a simple tin of chickpeas, to great effect.
Serves 6
Ingredients
- 150g (5.2 oz) raw cashew nuts, soaked for at least 4 hours
- 40g (1.4 oz) sultanas
- ½ Spanish onion, finely diced
- 120ml (4 fl oz) water
- 2 tbsp mango chutney
- 1 tin chickpeas, drained
- ½ tbsp curry powder
- Salt and pepper, to taste
Method
- Mash the drained chickpeas roughly with a fork and put in a bowl. Add sultanas and diced onion.
- Blend the cashew mixture with water and curry powder into a smooth cream.
- Add the cashew cream to the chickpeas and mango chutney and mix. Season with salt and pepper.
- Lay out slices of your bread, top with rocket and the chickpea filling.
