Coronation Chickpea Sandwich

Coronation Chicken is a traditional favourite with many people, but going vegan doesn't have to mean missing out! This plant-based version uses a simple tin of chickpeas, to great effect.

Serves 6


  • 150g (5.2 oz) raw cashew nuts, soaked for at least 4 hours
  • 40g (1.4 oz) sultanas
  • ½ Spanish onion, finely diced
  • 120ml (4 fl oz) water
  • 2 tbsp mango chutney
  • 1 tin chickpeas, drained
  • ½ tbsp curry powder
  • Salt and pepper, to taste

    Mash the drained chickpeas roughly with a fork and put in a bowl. Add sultanas and diced onion.

    Blend the cashew mixture with water and curry powder into a smooth cream.

    Add the cashew cream to the chickpeas and mango chutney and mix. Season with salt and pepper.

    Lay out slices of your bread, top with rocket and the chickpea filling.
