Green Pasta Salad with Tofu

This pasta salad is ready in 15 minutes, making it an absolute go-to on busy working days or when you need to make an easy packed lunch. Serves 2-3


  • 400-500g (14.1 oz-17.6 oz) pasta of choice
  • 100g (3.5 oz) tofu
  • 1 broccoli (200g/7 oz)
  • 1-2 soft avocados
  • 1 tbsp capers
  • A handful of black olives
  • A handful of pea pods
  • Juice from 1 lime
  • 1-2 tbsp of balsamic vinegar

    Start by putting your pasta in a pot of boiling water, cook for 8-10 minutes.

    While the pasta is cooking, press the tofu to remove the water. Cut into small cubes. Fry the tofu in a pan with a tablespoon of oil, and salt and pepper. Fry in the pan while stirring until golden.

    Chop the broccoli into small bouquets and cook with the pasta for the last 5 minutes.

    Wash the spinach, chop the pea pods and avocado. Cool down the pasta and broccoli under cold water. In a large bowl mix the pasta, broccoli, spinach, pea pods, avocado, capers, olives and fried tofu on top. Squeeze the lime, balsamic vinegar, salt and pepper on top. Enjoy!
