Sprout, Pepper & Walnut Stir-Fry
Sprout, Pepper & Walnut Stir-Fry - Why not stray from tradition this year and serve up a festive stir-fry as your centrepiece? It’s also a fantastic Boxing Day dinner to use up your leftover sprouts.
- 1 tbsp olive oil
- 1 onion, sliced
- 1 red pepper, sliced
- 500g (1.6 lb) Brussels sprouts, halved
- 100g (3.5 oz) California Walnuts
- 2 tbsp redcurrant jelly
- Heat the oil in a large frying pan and fry the onion and pepper for 4-5 minutes. Add the sprouts and walnuts and continue to fry for 5 minutes.
- Stir in the redcurrant jelly with 2 tbsp water until melted and season.
Vegan Life tip
Frozen sprouts can be used instead of fresh, just defrost before use. Try cranberry sauce instead of the redcurrant jelly.
