Sprout, Pepper & Walnut Stir-Fry

Sprout, Pepper & Walnut Stir-Fry - Why not stray from tradition this year and serve up a festive stir-fry as your centrepiece? It’s also a fantastic Boxing Day dinner to use up your leftover sprouts.


  • 1 tbsp olive oil
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 500g (1.6 lb) Brussels sprouts, halved
  • 100g (3.5 oz) California Walnuts
  • 2 tbsp redcurrant jelly


  1. Heat the oil in a large frying pan and fry the onion and pepper for 4-5 minutes. Add the sprouts and walnuts and continue to fry for 5 minutes.
  2. Stir in the redcurrant jelly with 2 tbsp water until melted and season.

Vegan Life tip

Frozen sprouts can be used instead of fresh, just defrost before use. Try cranberry sauce instead of the redcurrant jelly.
