Tomato and Orange Soup

Tomato and orange are favourite flavours, so it’s wonderful to be able to combine both ingredients into this light soup. We love how the sherry vinegar lifts the flavour to new heights.



  • 2 medium onions
  • 3 tbsp extra virgin olive oil
  • 1kg (2.2lb) tomatoes
  • 500ml (1 pint) filtered water
  • Orange, juice, and half inch sliver of zest
  • 1 tsp sherry vinegar


  1. In a large pan, sauté the onions in olive oil. Cook until they turn translucent.
  2. Add the tomato, water and zest. Cook on a low heat for about 15 minutes.
  3. Turn off the heat and remove zest. Whizz with a blender or place in batches in a liquidiser.
  4. Add the orange juice and sherry vinegar. Season to taste.
