Vegan Fried Egg & Avocado Breakfast Sandwich

A healthy, easy and delicious vegan breakfast sandwich and a great recipe idea for a special Sunday brunch. Find out how to make a runny, savoury vegan fried egg using tofu!

Serves 4

For the vegan egg yolk

  • 240ml (8 fl oz) water
  • 3 tsp cornflour
  • 1 tsp garlic powder
  • 1 tbsp nutritional yeast
  • 1 tbsp vegetable oil
  • ¼ tsp turmeric powder
  • ¾ tsp black salt (kala namak)

For the breakfast sandwich

  • 4 whole wheat English muffins (make sure they are vegan)
  • 1 block extra firm tofu, drained (for extra crispiness, press as well)
  • 1 tbsp vegan butter or margarine
  • ½ tsp garlic powder
  • Sprinkle of black salt (kala namak)
  • Pepper, to taste
  • Optional additions: vegan sausage patties, wilted spinach, vegan cheese

    To make the vegan fried 'egg' pour the water and 3 tsp of cornflour in a saucepan with no heat. Stir until the cornflour dissolves.

    Turn heat on medium low and add the nutritional yeast, vegetable oil and turmeric powder. Stir on low heat until egg yolk thickens - about 3-5 minutes.

    Turn heat off and stir in garlic powder and 3/4 tsp of black salt and set egg yolk aside.

    Drain your tofu, turn it on its side and slice into 4 thin slices. Cut the corners off if you'd like to have a round, egg shape.

    Melt 1 tbsp of vegan butter in a sauté pan on a medium heat. Once pan is warm, set your tofu slices in and don't touch for 3-5 minutes (this ensures it will get crispy and golden brown). Flip the tofu and cook for 3-5 minutes.

    Turn off heat and season with the garlic powder, black pepper and a sprinkle of black salt.

    Cut a small hole in the middle of the tofu and eat the middle so it does not go to waste. This is for the egg yolk mixture to sit in, in a moment.

    To put it all together toast your English muffins. Smash the avocado onto the English muffin and season with a little black salt and pepper.

    Place the tofu with the hole in the middle onto the English muffin.

    Gently pour the 'egg yolk' mixture into the hole in the tofu, adding as much as you like.
